I pour diced or stewed tomatoes into a pan, bring to a slow boil, then throw in three or four eggs. They are poached by the simmering tomatoes. I then toss in two or three cloves of fresh garlic.
I’ve had this breakfast every day this week. I find it can get addictive. Which is good, given this about tomatoes.
